Older fire systems were designed and tested using shortening and beef talon that burned at a lower temperature which was the cooking method of the day. Today’s cooks use healthier polyunsaturated oils that create a grease laden vapor that burns at a much higher temperature and cannot be extinguished with the older dry chemical and wet chemical fire systems. The state adopted the new regulations on January 2008, and required that they all be replaced.
